Ingredients
  • 4 large Yukon gold potatoes, scrubbed clean
  • 1/2 tsp. kosher salt, plus more for the pot
  • 2 tbsp. olive oil, plus more as needed
  • 3 cloves garlic sliced thin
  • 2 slices bacon, chopped
  • 1/2 large white onion, sliced thin
  • 1/4 tsp. chopped fresh rosemary
  • 2 tsp. chopped fresh oregano
  • 1 Large pinch of flaky sea salt
  • 1 tbsp. chopped fresh parsley

    Add the potatoes to a large pot and cover with water. Season the water with a hefty pinch of kosher salt and bring to a boil. Cook the potatoes until fork tender, about 25 minutes. Drain, set aside, and let cool.
